El Salvador coffee had an undeservingly poor reputation for years, marred mostly by the inability to deliver coffee of high quality in an unstable political climate.

But the democratic movements and decades of civil war have changed many things. It shows in the quality of coffee and the availability of small lots from exceptional small-scale farms. Instead of low grade commercial blending coffees, we now see an eruption of farm-specific regional offerings from small co-ops or estates. El Salvador always had the right ingredients ---soil, altitude, climate ---to produce great coffee like Bourbon, the classic old-world coffee.

Nearly 70% of El Salvador’s total coffee production is Bourbon, which is one of the most desired coffee varietals. It is harder to grow, more susceptible to disease and provides a lower yield than other beans, but it also produces some of the finest coffee in the world.

Guatemalan coffee is revered as one of the most flavourful and nuanced coffees in the world. Due to the proximity to Guatemala, some of the finest coffees from this origin go to the United States. Guatemalan growing regions vary in their potential cup quality: many have sufficient altitude, soil and climate conditions

FEDECOCAGUA is a second-level co-operative founded in 1969 to improve the position of small-scale coffee growers. It is the umbrella organisation for 19,354 coffee farmers belonging to 37 affiliated farmers’ organisations. FEDECOCAGUA provides a range of services including access to a credit scheme, technical support, transport, warehousing, and the purchase, processing and export of members’ coffee beans. This commercialisation of coffee production means the farmers receive higher prices than when they had to sell to middlemen.

A "restrained" and approachable Guatemala flavour profile, there are ample chocolate tones, layers of milk chocolate and hints of pleasant cocoa, The mid-palate is this bright lemon rind that catches you by surprise, then it goes back to the sweet milk and creamy chocolate bittersweetness, a thick mouthfeel.
