Nearing the top of list of the world's finest Arabica coffees is Kenya AA . What is the AA you wonder?

The Coffee Board of Kenya realizes the quality of coffee they are capable of making and they have strict guidelines in place to grow the best beans possible. The AA denotes the size, shape and density of the bean.

 The grading scale from largest to smallest is AA, AB, PB, C, E, TT and T. It is a well-known fact that the largest, AA , bean is going to produce more of the treasured oils that give your coffee the fabulous aroma and intense flavour.

 This medium roasted gourmet coffee assures a sharp acidity, a  solid body and smooth winy penetrating flavour with an intense aroma.

What does this mean? It refers to the fruit acid taste structure of the typical Kenya AA coffee. Now most people, when they hear the word acid, take it as a negative. In this context it is not. But perhaps the words dry, and crisp would be more compelling. So we will use them. And let's not forget fruit, like a first growth Bordeaux or a great Cabernet from Napa Valley. So at the end of the day, Kenya coffee is best known for its berry like and frequently blueberry and black current taste.

    Like Guatemala and El Salvador, Nicaragua too is recovering from the brutality of civil war followed by the ravages of 1998 hurricane Mitch. In the case of Nicaragua, its coffees are only now becoming known again.

     

    Most Nicaragua coffee is shade grown. The highest grade is Strictly High Grown (SHG) which these pods are.

     

    Fragrant, complex, with a nut and vanilla bouquet, moderately acidy and medium in body, and a rich, sweet flavour profile that has with a slight nutty finish, with overtones of chocolate that’s lovely and almost chewy

    There are many types of coffees in the world and the main species are Arabica and Robusta.  Arabica is a high quality, mild coffee much favoured for blending.

    Kenyan Arabica is grown on rich volcanic soils found in the highlands between 1400 to 2000 meters above sea level.  It is an established fact the finest Arabic coffee in the world is grown in Kenya.

    The climate is never hotter than an European summer and never cooler than the best kind of European spring with a temperature range of not more than 19C (35F).  Rainfall is well distributed throughout the year where coffee is grown with an annual precipitation not less that 1000 mm (35”) and deep well-drained red loam soils.  These conditions make most of the districts in Kenya where coffee is grown unique in the world.  There are broad, gently rounded ridges, sloping not too steeply into valleys which run swift perennial streams.  The red volcanic soil is of great depth and fertility on the slopes ensuring good drainage.

    Coffee production goes through a systematic protocol from seed to cup from nursery, farm, pulping, milling and grading.  Attention to detail guarantees that the consumer only gets the best of our Kenya Coffee.

     

    MBUNI (Sun Dried Coffee, Not Wet Processed)

     

    Mbuni is coffee that has not gone through the wet process (unwashed).  It comprises about 10% of the total crop and graded either as heavy mbuni (MH) or light mbuni (ML), because it was not picked, or because it fell from the trees after ripening.

    MH
    Fairly bold, solid bean, good yellow colour, no full blacks pieces of cherry or other bad defectives permitted.  Liquor must be a typical "Mbuni" flavour with no taints.

    The beans are very rich in flavour. 

    This is a very unusual coffee with a very ‘Earthy’ flavour, and great after taste - Not to be missed

Due to the proximity to Guatemala, some of the finest coffees from this origin go to the United States. Guatemalan growing regions vary in their potential cup quality: many have sufficient altitude, soil and climate conditions

     

    FEDECOCAGUA is a second-level co-operative founded in 1969 to improve the position of small-scale coffee growers. It is the umbrella organisation for 19,354 coffee farmers belonging to 37 affiliated farmers’ organisations. FEDECOCAGUA provides a range of services including access to a credit scheme, technical support, transport, warehousing, and the purchase, processing and export of member's coffee beans. This commercialisation of coffee production means the farmers receive higher prices than when they had to sell to middlemen.

     

    A "restrained" and approachable Guatemala flavour profile, there are ample chocolate tones, layers of milk chocolate and hints of pleasant cocoa, The mid-palate is this bright lemon rind that catches you by surprise, then it goes back to the sweet milk and creamy chocolate bitter-sweetness, a thick mouth-feel.

    Monsooned Malabar coffee has something of an exotic history. The blend has its origins from the times of the British Raja; the green beans originally developed their distinctive yellow colour from being stored within the humid holds of the slow spice ships as they travelled across the oceans to deliver coffee to Europe.

     

    Today a similar effect is obtained by storing in special warehouses in the port town of Malabar until the monsoon season comes around. The sides of the structure are then opened allowing the moist monsoon winds to circulate around the picked green beans making them swell in size and take on a mellowed, yet aggressive, musty flavour. They turn very pale in colour and become brittle. You'll get the most unusual tasting coffee that we've found so far.

     

    The blend is heavy bodied, pungent and of monotone quality and is considered to be dry with a chocolaty aroma and a slightly sharp taste, deep, low acidity, intense spices Tobacco, almonds, peanut, musty flavours.
