Old Brown Java

Old Brown Java, is also known as Old Brown coffee, or Old Government Java.

 

The coffee is grown on the old colonial estates on the east end of Java Island in Indonesia.

 

Old Brown Java was traditionally used as ballast on sailing ships travelling to Europe in the 17 & 18 hundreds, where the sea water gave the coffee a distinct flavour

 

Its mild acidity, heavy-bodied taste and sweetness is still attained through a weathering process which can take from 2 to 7 years.

 

The green coffee beans which are milled but not yet roasted and are then exposed to the region’s moist, warm air throughout the rainy season. The ‘monsooning’ process results in a strengthening of the coffee’s taste, a weakening of the acidity. There is also a distinct colour change from the original green tint of the coffee beans to a light brown colour.

 

The flavour of these Arabica coffee beans is truly unique, and similar only to our Monsoon Malabar in spiciness. The musky complex aromas are matched by the rustic earthy flavour notes. The long finish and big body makes this coffee especially impressive

Technology, research and attention to the environment during coffee production have led Daterra to be known as one of the best coffee producers in the world.

 Daterra was Brazil's first sustainable coffee farm. In 1999 Daterra became ISO 14001 certified and in 2003 became Rainforest Alliance certified, another first for Brazil.

Daterra’s values revolve around massive investment in research, quality improvement, solid partnerships and responsible governance, environmental protection, and social development. Daterra grows its own seedlings and uses organic composting in 100% of the plantation.

Sweet Bourbon Coffee;

Bourbon Collection is a blend which combines red and yellow Bourbon beans grown on the Daterra farms. The component coffees used to create the Bourbon Collection may vary annually in order to maintain the quality and consistency of the blend

So what can you expect from the cup?

Syrupy sweet and nutty with distinct notes of creamy milk chocolate and cookies, with complex fruity flavours in the finish.

 Coffee cultivation was introduced to Nicaragua during the mid-1800s.

At one time, Nicaraguan coffee was more popular and sought after than it is today

 

Like Guatemala and El Salvador, Nicaragua too is recovering from the brutality of civil war followed by the ravages of 1998 hurricane Mitch. In the case of Nicaragua, its coffees are only now becoming known again.

 

La Bastilla farm is situated approximately 20 kilometres away from Jinotega, or 6 kilometres to the East of Apanás Lake, and is adjacent to the Datanli el Diablo nature reserve, which is an important biological reserve in the

Jinotega area.

The farm covers 311 hectares, of which 160 hectares are currently dedicated to the production of coffee.

 

 

Most Nicaragua coffee is shade grown. The highest grade is Strictly High Grown (SHG) which these pods are.

 

Good Nicaraguan coffees are considered a "classic" cup: great body, clean flavour, and balance. They are unique among Central American coffee, in the fact that the highest grown (SHG grade: Strictly High Grown) do not develop the pronounced and sharp acidity of other Central American growers.

 

Fragrant, complex, with a nut and vanilla bouquet, moderately acidy and medium in body, and a rich, sweet flavour profile that has with a slight nutty finish, with overtones of chocolate that’s lovely and almost chewy

Guatemalan coffees are revered as some of the most flavourful coffees in the world.

Strictly Hard Bean; "SHB" refers to coffee grown at altitudes higher than about 4,500 feet above sea level.

Beans grown at high altitudes mature more slowly and grow to be harder and denser than beans grown at lower elevations.

The inherent consistency and taste attributes of high grown beans means that they have  a more consistent flavour, which is  rich, smooth and delicious and therefore more desirable, and of course generally more expensive.

 

The goals of Fedecocagua, Federation of Agricultural Cooperative of Coffee Producers of Guatemala Ltd, are the same as when it was founded in 1969: to achieve better market opportunities for small coffee producers and improve the living standards of their families. It achieves this by putting into practice the principles of teamwork, creativity, innovation, social responsibility and respect for nature.

 

The fragrance from the dry grounds has raisin-fruited notes accented with citrus, and dark-toned brown sugar sweetness, and a slight savoury note.

After adding hot water this coffee has an ebullient, lively brightness, sweet-fruited notes, and mild sweet

chocolate-dipped nuts.

As it cools there are slight almond nutty roast tones that come out, apple flavours, a hint of cranberry, with a lingering citrus acidic snap to the cup

The body is medium-to-light, which suits the nature of this cup well

Cajamarca Organic coffee is grown in the Altomayo region located in the Northeastern region of Peru. The coffee comes from a selection of small producers from Cutervo, & Cajamarca.

The average farm is ten hectares.


This Shade Grown, (SG) Strictly High Grown (SHG) Peruvian coffee is cultivated high in the Andes mountains underneath a habitat-forming, “bird friendly,” native canopy by a 100% worker-owned cooperative.

The mountains provide altitude and a great variety of micro climates. The average rainfall is between 1800 mm. and 2000 mm. and is consistent throughout the year. The area has very fertile soils and due to its high altitude the coffee is free from pests.

The coffee is certified organically by OCIA, and has been approved and certified by JAS in Japan.

El Salvador coffee had an undeserving poor reputation for years, marred mostly by the inability to deliver coffee of high quality in an unstable political climate.

But the democratic movements and decades of civil war have changed many things. It shows in the quality of coffee and the availability of small lots from exceptional small-scale farms. Instead of low grade commercial blending coffees, we now see an eruption of farm-specific regional offerings from small co-ops or estates. El Salvador always had the right ingredients  - soil, altitude, & climate to produce great coffee like Bourbon, the classic old-world coffee.

 

Nearly 70% of El Salvador’s total coffee production is Bourbon, which is one of the most desired coffee varietals. It is harder to grow, more susceptible to disease and provides a lower yield than other beans, but it also produces some of the finest coffee in the world.

Mexican coffee originates from South-central to Southern regions of the country. Mexican is one of the largest producers of certified organic coffees, and because of the close proximity to the USA, they receive the bulk of fine Mexican coffees.

 

A clean, lightly fruited brightness, the dry fragrance has a crisp caramel scent, with a trace of red apple. Wet aroma is nutty, with the scent of bread in the oven, honey-vanilla, and just a little maple and apple. The cup has a mild and delicate acidity that gives a sense of refreshing brightness, but low in intensity. There's a grainy sweetness in this coffee short-lived on the palate, but zesty nonetheless: Simple, sweet, mildly bright.
